Skirt

I finished making this skirt on Sat. It was my first one ever - I'm just learning the frustrations of making skirts!
Note to self: make sure the elastic is straight before sewing it in! :-)

I am working on one today.

Oat Banana Bread

Ingredients:
(I made a double recipe)
-6 very ripe bananas (medium-large)
-2/3 cup melted coconut oil
-2 eggs
-2 tsp. vanilla extract
-3 cups oat flour
-2 tsp. ground cinnamon
-2 tsp. baking powder
-1 tsp. baking soda
-1 tsp. sea salt
-1 cup chopped walnuts or almonds (opt.)

Directions:

1. Preheat oven to 350 degrees and grease two loaf pans. In a large bowl mash bananas until they form a slightly chunky banana paste. Add melted coconut oil and incorporate. Beat in eggs and vanilla.

2. In a separate, mediun-sized bowl combine the dry ingredients. Whisk together until completely combined.

3. Add the dry ingred. about 1/3 at a time, mixing until barely combined each time. After all of the dry ingred. have been added fold in the nuts.

4. Scrape batter into prepared laof pans and bake in 350 oven for 45-50 minutes, or until a knife comes out clean when enserted into center of loaf. Turn out onto a cooling rack and cool completely before cutting or it may turn extra crumbly.

Boots

I just have to make a post about my new boots! Mom and I went on a date. We shopped at Herbergers and Joann Fabrics today. I got (besides my boots) a sweater, some jeans, some yarn and a couple other things.

Love at first sight!

Birthday

Today is my birthday. We had pancakes and eggs and I opened up presents after breakfast.

Dad made/carved this box containing writing supplies. I love it! It will last a long time.

Hat/bracelet from little brother. He made these!

Necklace from little sister. She made it :-)

Mini doughnut maker from a grandparent. I will use it a lot!

Tortillas 2

I know I already did a post on this but I didn't include the entire process last time. Mom soaked the corn in lime water overnight after bringing it to a boil. Then she rinsed and rubbed it well to get the outer husk off.

Unground corn mixture

Dad and Avery ground it up with our Corona mill.

Ground corn

Mom kneaded it together and added water and salt.

We made it into balls a little bigger than golf balls and pressed them.
(It's a homemade tortilla press that my dad made.)

We had a little plastic bag on the inside so it wouldn't stick to the press.

We fried them on high heat on the griddle.

This is our best one because it bubbled, and I guess that's good.

We enjoyed this batch best because we didn't put as much water in so it wasn't as grainy and coarse as the last batch. Also we ground it in the Corona mill instead of the food processor.

Date Bars

Us kids decided to surprise Mom and Dad. We cleaned up some. Then we made date bars.

The recipe is in Mom's cookbook.

Silly Kitty!

Our kitty (Rascal - an appropriate name) loves being 'scratched' through the window! :-)
There is a video here but it takes a while to load...sorry :-(
